Those who have watched Mondovino, the wine documentary by Jonathan Nossiter, will probably recognise Aimé Guibert on the picture - a traditionalist vigneron from Languedoc, who quite boldly declares that “le vin est mort” (wine is dead).
The story of Mas de Daumas Gassac is one of vision, enterprise, passion, pride and sheer luck. The farm (the mas) was purchased by Aimé Guibert in the 1970s, who was a Parisian glove manufacturer at the time, with no intention of making wine. A visit from Bordeaux professor of Oenology Henri Enjalbert, turned the table completely . The professor realised that the place had a particular micro-climate which would give them the potential to make great wines - the red glacial soils beneath the local garrigue, together with the altitude, and the currents of cool air that pass over the vineyards at night.
The microclimate also means that the vines flower three weeks later than the Languedoc average.
The cellars have been created in the foundations of a Gallo-Roman mill. There are two cold water springs under the cellar's floor, nature own air conditioning system.
